Cucumber Salad with Crispy Chickpeas and Whipped Feta

Sometimes I wake up in the morning knowing exactly what I want to eat. I have a kind of vision of a dish and I just really need to try it! That morning, I had a particular craving for a salad that included everything I love: freshness, creaminess and crunchiness! So here’s my super pretty cucumber salad that I served with crispy chickpeas and vegan whipped feta. It’s perfect for entertaining, and your guests will love it!

Cucumber Salad with Crispy Chickpeas and Whipped Feta
Ingredients

Crispy Chickpeas

  • 1 can (540 ml) chickpeas, rinsed and well drained
  • 2 tablespoons (30 ml) vegetable oil
  • 1/2 teaspoon (2.5 ml) dried oregano
  • 1/2 teaspoon (2.5 ml) salt
  • Pepper, to taste

Whipped Feta

  • 100 g dairy-free feta cheese
  • 1/4 cup (60 ml) dairy-free cream (I use Belsoy soy cream)
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon (5 ml) honey
  • 1/4 teaspoon (1.25 ml) salt

Cucumber Salad

  • 3 English cucumbers, finely diced
  • 2 green onions, thinly sliced
  • 1/3 cup (80 ml) coarsely chopped fresh dill
  • 3 tablespoons (45 ml) white wine vinegar
  • 1 teaspoon (5 ml) honey
  • 2 tablespoons (30 ml) olive oil
  • 1/2 teaspoon (2.5 ml) salt
  • Pepper, to taste

Preparation

Crispy Chickpeas

  • Preheat oven to 425°F and place rack in center. Place a baking sheet in the oven until heated through. This step is designed to make the chickpeas even crispier.
  • Place the well-drained chickpeas on absorbent paper to remove as much water as possible. Once again, this step is crucial for crispy chickpeas.
  • In a bowl, combine chickpeas, oil, oregano, salt and pepper.
  • Carefully remove the baking sheet from the oven and place the chickpeas on it, making sure not to stack them on top of each other. Bake for 20 minutes, stirring halfway through.

Whipped Feta

  • Place all the ingredients for the whipped feta in a narrow container. Using a hand blender, blend until smooth.

Cucumber Salad

  • In a large bowl, combine all salad ingredients.
  • Spread the whipped feta on the bottom of a large plate. Add the cucumber salad and crispy chickpeas. Serve.
