When I saw this recipe on social media, I immediately thought I HAD to make a dairy-free version! This recipe for bars made with soda crackers, bourbon caramel and chocolate is an easy dessert recipe that’s quick to prepare and perfect for your sweet tooth!

Christmas Cracks
- 35 to 40 soda crackers
- 1 cup (210 g) brown sugar
- 1 cup (225 g) dairy-free margarine
- 1 teaspoon (5 ml) vanilla
- 3 tablespoons (45 ml) bourbon
- 2 cups (360 g) dairy free chocolate chips
- 1/2 cup (60 g) pecans or other nuts of your choice, chopped
- 1/4 cup (60 ml) freeze-dried strawberries or raspberries (optional)

- Preheat oven to 400°F and place rack in center. Line a baking sheet with aluminum foil.
- Divide the soda crackers among several tightly packed columns on the baking sheet.
- In a saucepan, bring brown sugar, margarine, vanilla and bourbon to a boil, stirring often. Reduce heat and simmer for 2 minutes, stirring often. Spread caramel over soda crackers and bake for 5 minutes. Remove baking sheet from oven and sprinkle with chocolate chips. Return baking sheet to oven for 3 to 4 minutes. Spread melted chocolate over bars and sprinkle with pecans and freeze-dried strawberries.
- Place the slightly cooled baking sheet in the refrigerator for 1 hour.
- Break the bar into several pieces and enjoy!
