Watermelon and Avocado Salad with Jalapeño and Basil Dressing
This watermelon salad is on my table every summer!
It’s fresh, simple and the jalapeño and basil dressing adds a nice punch without being too spicy! I’m sure you’ll love it!
- Servings: 4 to 6
- Preparation time: 20 minutes
Ingredients
Jalapeño and basil vinaigrette
- 1/4 cup (60 ml) lime juice
- 1/4 cup (60 mL) olive oil
- 2 tablespoons (30 mL) water
- 1/2 jalapeno, seeded and coarsely chopped
- 1 cup (250 ml) fresh basil leaves
- 1 garlic clove, chopped
- 2 teaspoons (10 ml) maple syrup or honey
- 1 teaspoon (5 mL) salt
Watermelon salad
- 1/2 watermelon, cubed
- 3 avocados, cubed
- 2 green onions, thinly sliced
- Tajin salt, for finishing

Preparation
Jalapeño and basil vinaigrette
- Using a blender or a food processor, blend all dressing ingredients until semi-smooth.
Watermelon salad
- In a large bowl, toss all salad ingredients with jalapeño and basil dressing. Add a little Tajin salt to the salad and enjoy!
Notes : To make watermelon salad more protein-packed, I recommend adding grilled chicken or tofu. It’ll be just as delicious! It’s normal for watermelon to release a lot of water. Just drain a little before serving!
