Rice Krispie Squares with Raspberries and White Chocolate
I wanted to offer you an easy Christmas dessert recipe and, in my opinion, it doesn’t get simpler than a good Rice Krispie square. I added my own personal touch by using Oatbox’s white chocolate and raspberry granola, and the result is amazing! The raspberries bring a beautiful colour and a hint of acidity, and the granola adds texture!

Ingredients
- 1/3 cup (70 ) vegetable or regular butter
- 8 cups (360 g) mini marshmallows
- 1 teaspoon (5 ml) vanilla
- 1 pinch salt
- 4 1/2 cups (135 g) Rice Krispies cereal
- 1 bag (300 g) Oatbox white chocolate and raspberry granola
- 1/4 cup (60 ml) freeze-dried raspberries

Preparation
- Line an 8″ x 8″ baking tin with parchment paper.
- Heat the vegetable butter in a large saucepan over a medium heat until it has completely melted. Add the marshmallows and stir until they have melted completely. Remove from the heat and stir in the vanilla and salt. Stir. Add the Rice Krispies cereal and granola, stirring until the cereal is evenly coated with the marshmallow mixture.
- Transfer the mixture to the mould and press down lightly. Sprinkle with lightly crushed freeze-dried raspberries. Leave to cool for 15 minutes at room temperature.
- Slice into squares and enjoy!
